This was FABULOUS!! I loved it and my family did too. My youngest son suggested adding chicken and my husband suggested kielbasa, but it was a wonderful meatless meal.
Many people are choosing to do one or two meals a week meatless for health and global issues. This is a super meal for meatless nights or add in what you think fits best.
I also love meatless meals because I don’t have to defrost anything, which helps me out if I happen to forget.
1 tsp olive oil
½ onion, medium
3 cloves garlic minced
½ tsp thyme, ground
½ cup tomatoes, sun dried (without oil)
1 large spaghetti squash
4 cups spinach, torn
Salt and pepper to taste
6 oz Greek yogurt “cream cheese”

Inspired by a recipe from Cooking Light.
Start with plain, fat-free, Greek yogurt, make as much as you like.
Line a small colander or fine mesh strainer with a coffee filter or several layers of cheese cloth or a large square cut from a cotton t-shirt.
Put the yogurt in the liner of colander or strainer. Cover with another coffee filter.
Set the colander inside of a bigger bowl, being sure that the bottom will not touch the whey that will drain from the yogurt.
Let drain in the refrigerator for 12-48 hours. The longer it drains, the thicker it will be.
