I love to make a big batch of this chicken and vegetable soup to use as a mini-detox after a few days of unusual indulgence. Like maybe after vacation or a holiday weekend.
This isn’t really a weight loss thing, although my weight usually does come back into balance. It is more of a great way to re-set my body and mind and get back into alignment with my soul. It is like re-booting myself to get the data in my cells, mind and soul back to the right pattern or sequence, so I can easily remember what I truly want for myself. Otherwise, it might be cloudy and hard for me to focus on. The wholesome nourishment of this chicken soup is filling and satisfying with a touch of sweetness from the corn and onion. I’ve been known to eat it for breakfast, lunch and dinner some days. If I am using it as a mini-detox, most days I will eat it for breakfast and dinner with maybe a salad with lean protein and my favorite homemade balsamic salad dressing for lunch. This soup is so easy to make and bursting with vegetables and lean protein. If I am feeding my family, I may make a pot of egg noodles that they can add to the soup or some healthier grain bread. Yield About 10, 2 cup servings 0 Weight Watcher Smart Points Total Time 30 minutes Ingredients 1 pound cooked chicken breast, chopped or shredded 1 tsp olive oil or coconut oil or whatever you like 4 cloves minced fresh garlic 1 medium onion, chopped 10 cups chicken broth, reduced sodium if desired Frozen Vegetables: broccoli, carrots, sugar snap peas, spinach, kale, mushrooms, whatever you like, I use 4-5 bags and about 1/2 cup of corn Instructions In a large soup pot: Saute the onion until translucent in olive oil and then add garlic for about 30 seconds Add chicken, chopped or shredded Add Frozen Veggies Add chicken broth to cover, probably 8-10 cups (I use water and bouillon cubes.) Bring to a boil then let cool. Keep in refrigerator in small containers for a quick breakfast or lunch or dinner. 0 SP Worthified Tips I like the packaged rotisserie chicken breast from Costco in the deli section.
