My Crazy Breakfasts...I've been told many times that my breakfast choices are "interesting" and also that my creative healthy eating was inspiring. One of my favorite breakfasts is leftovers from the night before, usually some lean protein and veggies. One of my favorite leftovers is turkey chili.
I'm sharing some of the things that I have found in my journey to body happiness and weight wellness because people often ask me about it and I want to share what has worked for me and hopefully help others. I've always been very good at eating and tend more toward lunch than breakfast. In my younger, less healthy days, pizza was a favorite morning food. Now, I still may have those same flavors, just in a redesigned package. Today, I went for turkey chili zmac topped with small dollops of creamy cottage cheese and punchy chopped red onions. The zmac, was zucchini spiralized noodles (zoodles). Most of it was leftover from dinner the night before, so it was speedy. It was quick to spiralize some zoodles. Vegetables abound in this crazy breakfast. Tomatoes, kidney beans, red onions, and zucchini. My chili is healthy with beans, ground turkey, onions, tons of tomatoes and chilis. Spiced with chili powder, garlic, cumin, red pepper, salt, pepper and monk fruit with stevia. Ingredients 1 ½ pounds ground turkey, 99% fat free 2 cans spicy chili beans 1 6 oz. can tomato paste 4 cans petite diced tomatoes 2 cans diced tomatoes with chilies 1 29 oz. can tomato sauce 1 large onion chopped, save some for topping 4T chili powder 2T garlic powder 1t cumin 1t salt 2t pepper ½ t red pepper 4 packets monk fruit and stevia mix or another natural sweetener Toppings (Optional) Low fat cottage cheese 1/4 cup for 1 SP Low-fat sour cream, 2 Tbsp for 2 SP 2% Shredded sharp cheddar cheese, 1/4 cup for 3 SP Sliced pickled jalapeños Zoodles 3 Zucchinis, spiralized Instructions 1. Brown ground turkey and chopped onion 2. Drain fat 3. Add tomato products and chili beans 4. Add seasonings and sweetener 5. Bring to a boil 6. Simmer for 5-10 minutes or longer if you have time 7. Steam or microwave spiralized zucchinis for 3 minutes 8. Pile zoodles in bowl, top with chili and desired toppings 9. Yum it up!
