This was FABULOUS!! I loved it and my family did too. My youngest son suggested adding chicken and my husband suggested kielbasa, but it was a wonderful meatless meal.
Many people are choosing to do one or two meals a week meatless for health and global issues. This is a super meal for meatless nights or add in what you think fits best. I also love meatless meals because I don’t have to defrost anything, which helps me out if I happen to forget. 1 tsp olive oil ½ onion, medium 3 cloves garlic minced ½ tsp thyme, ground ½ cup tomatoes, sun dried (without oil) 1 large spaghetti squash 4 cups spinach, torn Salt and pepper to taste 6 oz Greek yogurt “cream cheese”
