3 cups shredded cooked chicken breast, skinless
4 oz lean ham, cut into bite size pieces or shredded
15 oz frozen, chopped spinach, thawed
½ cup chicken broth, reduced sodium
6 oz Greek yogurt, “cream cheese”
1 tsp ground mustard
1 tbsp white wine, optional
1 ½ oz lemon juice
½ tsp salt
5 oz reduced fat Swiss cheese
Note: My family LOVED this recipe and I felt great because I knew it was healthy. But, the creamy sauce was not creamy after baking. Flavorful, but not creamy. Next time, I may try this in a skillet, to see if I can get it creamier.

Start with plain, fat-free, Greek yogurt, make as much as you like. J
Line a small colander or fine mesh strainer with a coffee filter or several layers of cheese cloth or a large square cut from a cotton t-shirt.
Put the yogurt in the liner of colander or strainer. Cover with another coffee filter.
Set the colander inside of a bigger bowl, being sure that the bottom will not touch the whey that will drain from the yogurt.
Let drain in the refrigerator for 12-48 hours. The longer it drains, the thicker it will be. Have fun, this is amazing in recipes!
