Savory and deliciously different, this healthy chicken recipe is elegant enough for a special night and easy enough for a quick dinner. 2 shallots, minced 6 cloves garlic, minced 1 tbsp fresh sage, finely chopped 1 pound ground chicken, 99% fat free 3 cups reduced sodium chicken broth 12-15oz frozen cauliflower rice or fresh (about 2 cups) 12-15 oz frozen or fresh pre-cut butternut squash 1 tbsp butter (delete for 1 point per serving) 6 cups fresh spinach, torn or 1 bag frozen ¼ cup parmesan cheese (delete for 1 point per serving)
