Healthy Banana Oatmeal Bars, 1 SP, (with Weight Watchers options)

Healthy Banana Oatmeal BarsHealthy Banana Oatmeal Bars


​These deliciously healthy bars are high in protein from the oats, Greek yogurt, eggs and coconut flour.  They also pack a punch of fiber from the bananas, oats, and coconut flour.

Awesome for a quick breakfast or a healthier dessert, you'll feel really good about them, before, during and after you eat them.  

They come together quickly and easily, which helps all of us that lead busy, blurry lives.  

I was happy I had them to offer to a few friends that were over while we were planning our sons' graduation party.  

You'll be proud to offer them too!




Total Time: 30 minutes

Ingredients
1 ½ cup uncooked old fashioned oats
1/3 cup coconut flour
½ tsp cinnamon
½ tsp baking soda
Pinch sea salt
3 Bananas, very ripe, mashed
1/3 cup Greek yogurt
1/3 cup sweetner (honey, maple syrup, or Splenda granulated)
2 eggs
½ tsp vanilla extract
 
Instructions
  1. Preheat oven to 350 degrees.  In a small bowl stir to combine oats, coconut flour, cinnamon, baking soda and salt.
  2. In a large bowl, mix on medium of electric mixer, mashed banana, Greek yogurt and sweetner, then add eggs and vanilla and mix well.
  3. Stir dry and wet ingredients to combine.  Pour mixture into 8x8 baking pan, coated with cooking spray or butter or coconut oil.  Bake for 18-22 minutes or until toothpick comes out clean.  Let cool at least 10 minutes then cut into 16 bars.
 
Yield: 16 bars

1 Weight Watchers Smart Points, if use fat-free or low-fat Greek yogurt and Splenda, granulated for sweetener.
+1 WW SP for honey or maple syrup

What are the points for the coconut flour

The WW app says 6 for coconut flour. I built this recipe in the recipe builder to get the points.

Are SP the same as the new program FP flex points?

I don’t think Smart Points are the same as Flex Points. I have been a Weight Watcher for 30 years but if my memory serves me correctly I used to get more Flex Points than Smart Points but there are more 0 point foods now. For example in this recipe, the fat free Greek yogurt is 0 Points.

By my calculations using the WW Freestyle App, thee come out to be around 4 points each (3.6).

I apologize. I miscalculated. It’s closer to 2 points using the Freestyle app. (2.25 to be exact).
