Fresh and succulent this chicken salad soothes and cools you on warm sunny days!
Total Time: 20 minutes
4 chicken breasts, skinless and boneless
Salt and pepper
8 cups leafy greens, red butter lettuce is perfect
1 cup grapes, cut in half
3-4 green onions, sliced
4 oz goat cheese, reduced fat, crumbled
Sunshine Salad Dressing
2 oz white vinegar
1 oz olive oil
Preferred sweetener to taste, Truvia, Splenda, honey*, sugar*
1 tbsp lemon juice
