This is savory, healthy and yummy! It works with Weight Watchers, Whole 30 and is clean eating.
Total Time: 25-30 minutes
2 tsp coconut oil
1 pound boneless, skinless chicken breast, cut into 1 inch pieces
1 14 oz bag frozen riced cauliflower and sweet potato
2 Granny Smith apples, cored, peeled and diced
9 oz bag baby spinach
¼ cup apple cider
¼ tsp sea salt
½ tsp black pepper
½ tsp red pepper, ground
Splash apple cider vinegar, optional
Yield: 4 large servings
