1 pound cooked chicken breast
1 tsp olive oil or coconut oil or whatever you like
4 cloves minced fresh garlic
10 cups chicken broth, reduced sodium if desired
Frozen Vegetables: broccoli, carrots, sugar snap peas, spinach, kale, mushrooms, whatever you like, I use 4-5 bags
In a large soup pot:
Saute the garlic in olive oil
Add chicken, chopped up
Add Frozen Veggies
Add chicken broth to cover, probably 8-10 cups (I use water and bouillon cubes.)
Bring to a boil then let cool.
Keep in refrigerator in small containers for a quick breakfast or lunch or dinner.
I like the packaged rotisserie chicken breast from Costco in the deli section.
I buy peeled garlic cloves in refrigerated section then chop in mini food processor and freeze in snack bags
