This, Savory Cauliflower Mushroom “Rice”, tastes carby even though it is all veggie! Makes a great healthy side dish that makes the whole family happy! And...it can be on the table quick! Yay!
2 tsp coconut oil
1 large onion, chopped
3 garlic cloves, minced
3 cups mushrooms, sliced
14 oz bag frozen cauliflower rice
1/3 cup vegetable or chicken or beef broth (reduced sodium, if desired)
4 cups spinach
¼ tsp red pepper, ground
1 tbsp fresh parsley, chopped or 1 tsp dried
Sea salt and pepper to taste
Parmesan cheese (optional)
Yield: 4 servings
1 Weight Watchers Smart Points, Parmesan cheese is optional and adds points.
