And...it can be on the table quick! Yay! Ingredients 2 tsp coconut oil 1 large onion, chopped 3 garlic cloves, minced 3 cups mushrooms, sliced 14 oz bag frozen cauliflower rice 1/3 cup vegetable or chicken or beef broth (reduced sodium, if desired) 4 cups spinach ¼ tsp red pepper, ground 1 tbsp fresh parsley, chopped or 1 tsp dried Sea salt and pepper to taste Parmesan cheese (optional) Instructions
