In honor of Cinco de Mayo I have 2 easy and healthy recipes for taco tidings that go well with Mexican food! Avocado Crema with a hint of a hot kick and Pineapple Salsa, sweet and as fiery as you want it. Avocado Crema, 1 Weight Watcher SP Total Time: 10 minutes Ingredients 1 ripe avocado, peeled ¼ cup pickled jalapeño slices ¼ cup brine from jalapeño slices 2 tbsp water 1-2 garlic cloves Instructions In a blender, puree all ingredients. Yield: 8 servings, about 2 tbsp each 1 Weight Watchers Smart Point Author: Kim Trotto Pineapple Salsa, 0 Weight Watchers SP Total Time: 10 minutes Ingredients 1 pineapple, chopped small or crushed 6 tomatoes, chopped small 1 onion, red or white, chopped small 2 tbsp lime juice ½ cup pickled jalepenos, chopped (or more or less to taste) ¾ cup cilantro, fresh, chopped Hot sauce to taste Sea Salt and fresh ground pepper to taste Instructions
